An experiment...pizza cups

Tonight was one of those nights when you think you are making something specific for dinner and when you go to make it you find that the ingredients you need have either gone bad or you don't have what you thought you did. Sooo my dinner is an experiment made from what I had in the kitchen.
I wanted to make a sort of pizza with bell peppers and ground turkey and chicken sausage. Since I have acid reflux I try to avoid red sauce on pizzaz so I use pesto sometimes. My jar of pesto was bad and I didn't have enough cheese to spread on a pizza so out the window went that idea.





I sauted these cute little bell peppers with some onion and ground turkey and chunks of chicken sausage. I mixed just a little bit of tomato sauce and an herb blend with the pepper and meat mixture so it sort of became all of the stuff that would have been on the pizza mixed together. Instead of a traditional rolled out pizza crust I made cups in a muffin tin out of bisquick and grated cheese and put the pizza mixture in the cups with cheese sprinkled on top.


I baked them just a little too long but they turned out good! I guess I'll call them pizza cups.

Wow! That's really cool! I like the idea of baking bisquick in a muffin tin with toppings. I might have to try that (soon)!
