My Baked Mac and Cheese recipe

Last night I went to a fabulous get together with friends. There were over 40 of us there! It was a lot of fun. I took a baked macaroni and cheese recipe from my grandma. Yesterday when I was looking for the recipe that she gave me I couldn't find it, I was pretty upset. My mom helped me to come up with the ingredients that go into it.
It was sort of a fly by the seat of my pants thing as I made it. I decided that I needed more sauce for how much macaroni I had so I just made more and mixed it in. It came out really good. Here's the recipe.

1 box of rigatoni. Cook it until it's al dente. Set it aside.

Sauce- I doubled what my mom told me. If you want a smaller amount cut this in a little more than half and cook half the box of rigatoni.

4 Tbsp butter
4 Tbsp flour
1/2 tsp salt
nutmeg
2 cups milk
2 cups of shredded cheese. I used 1 cup of sharp cheddar and 1 cup of gouda. You can do whatever kind you like. Gruyere would be good too.

melt butter completely. Mix in flour slowly with a wire wisk. When it's completely combined start adding the milk. Keep whisking. Add the salt. I added nutmeg here. I didn't measure. Just sprinkled some in. Add however much you want, but not too much. Bring to a boil and turn it down. Add cheese. Consistency here is sort of important. If it's still too soupy add some more flour. When I did that I mixed it with a bit of water first so I wasn't putting it in dry. It could clump. I did all of this in a big pot. When the sauce was the right consistency I added all of the macaroni to it so I could see how much coverage I had. You want every noodle coated with the sauce and enough to bubble up around them a bit. You can just add a bit more milk and cheese if there isn't enough coverage. Pour into your casserole dish and bake at 350 for about 30-45 minutes. I sprinkled more cheese on top and turned on the broiler a bit at the end.

One word: YUMMO!!! That looks great! Oh, and yummo is a word in my dictionary. It is a cross between yummy and oh my gosh how great is that?!
